You just got back from the gym. You're tired. You're hungry. The last thing you want is a recipe that takes 90 minutes and uses 15 ingredients. I get it. That's why I keep a rotation of fast, high-protein dinners that I can make on autopilot.
Every recipe here gets you 20g+ protein per serving and takes 30 minutes or less from start to plate.
1. Masala Egg Bhurji - 24g protein, 15 minutes
Masala egg bhurji is the fastest protein hit in my kitchen. Four eggs, some onion, tomato, and spices. Scramble it all together. Eat it with toast or rolled in a roti. Dinner in 15 minutes flat.
2. Crispy Tofu Stir Fry - 24g protein, 25 minutes
Crispy tofu stir fry with whatever vegetables are in your fridge. The key is pressing the tofu first (I do this while prepping vegetables) and getting the pan really hot. Serve over rice you prepped on Sunday.
3. Moong Dal Tadka - 18g protein, 25 minutes
Moong dal cooks faster than any other lentil. It doesn't even need soaking. Boil it, make a quick tadka (tempered spices in oil), and pour it over. With a side of rice and yogurt, you're at 30+ grams.
4. Besan Chilla with Paneer - 28g protein, 10 minutes
Dinner doesn't have to be a traditional "dinner food." Besan chilla with paneer takes 10 minutes, gives you 28g protein, and is honestly one of the most satisfying meals I eat.
5. Shakshuka with Feta - 22g protein, 25 minutes
Shakshuka is eggs poached in spiced tomato sauce with crumbled feta on top. It's simple, it's one pan, and it's loaded with protein. Eat it with crusty bread.
6. Thai Basil Tofu - 22g protein, 20 minutes
Thai basil tofu comes together incredibly fast if your tofu is already pressed. The sauce is simple - soy sauce, oyster sauce (vegetarian), garlic, chilies, and basil. Done in 20 minutes.
7. Caprese Baked Eggs - 20g protein, 20 minutes
Caprese baked eggs is Italian comfort food. Tomatoes, mozzarella, eggs, basil. Into the oven, out in 15 minutes. Eat with bread and a simple salad.
8. Simple Dal with Extras - 22g protein, 30 minutes
Our simple dal is designed to be the fastest possible dal recipe. Pair it with rice and a couple of fried eggs on top for a quick, complete meal.
9. Paneer Tikka Skewers - 24g protein, 25 minutes
Paneer tikka skewers on a hot grill pan. While the paneer cooks, warm up some naan and make a quick raita. Dinner party vibes in under 30 minutes.
10. Kung Pao Tofu - 22g protein, 25 minutes
Kung pao tofu with peanuts and vegetables. The sauce comes together in the time it takes the tofu to crisp up. Serve over rice.

Keep these in your fridge at all times: eggs, paneer, extra-firm tofu, Greek yogurt, and cooked rice or grain from your weekly prep. With those five things, you can make any of the meals above without a grocery run.
