This recipe was born from a Sunday evening fridge clean-out. I had bell peppers that needed to be used, leftover chickpeas, some spinach on its last day, and a block of cheese. I started stuffing the peppers with whatever I had, hit them with cumin and coriander, and something unexpectedly great happened.

The thing about stuffed peppers is they look like you spent hours in the kitchen, but the actual work is just mixing, stuffing, and baking. I've brought these to potlucks and they always disappear first. The cottage cheese in the filling was a later addition that changed everything. It adds protein without altering the flavor, makes the filling creamier, and keeps everything moist during baking.

Swapping rice for quinoa in the filling was another easy protein win. Between the chickpeas, cottage cheese, quinoa, and cheese on top, you're looking at 27g protein per serving. These reheat really well too, so I usually make a double batch and eat them for lunch throughout the week.

The Protein Upgrade

Standard stuffed peppers are mostly rice and vegetables with a sprinkle of cheese, about 10-12g of protein per serving. We overhauled the filling: replaced rice with quinoa, packed it with chickpeas and a full cup of cottage cheese (invisible once mixed in), used a generous 5oz of cheese topping, and added spinach for volume. From 10-12g to 27g, turning a side dish into a main event.

Chickpea & Spinach Stuffed Peppers

Ingredients

  • 4 large bell peppers (halved and deseeded (8 halves))
  • 2 cans (15oz) chickpeas (drained and roughly mashed) 11g protein
  • 5 oz fresh spinach (chopped)
  • ¾ cup quinoa (cooked) 2g protein
  • 1 cup cottage cheese 4g protein
  • 5 oz mozzarella or cheddar (shredded, divided) 8g protein
  • 1 tbsp olive oil
  • 1 medium onion (finely diced)
  • 3 cloves garlic (minced)
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • ½ tsp garam masala
  • ½ tsp turmeric
  • ½ tsp chili flakes
  • 1 tsp salt

Instructions

  1. Preheat oven to 400°F (200°C). Place halved peppers cut-side up in a baking dish. Drizzle with a little oil and bake for 10 minutes to soften slightly.
  2. While peppers bake, heat olive oil in a pan over medium heat. Sauté onion until softened, about 4-5 minutes.
  3. Add garlic, cumin, coriander, turmeric, and chili flakes. Cook for 1 minute.
  4. Add spinach and cook until wilted, about 2 minutes.
  5. Add mashed chickpeas, cooked quinoa, garam masala, and salt. Mix well. Remove from heat.
  6. Stir in cottage cheese and half the shredded cheese until well combined.
  7. Spoon the filling generously into each pepper half. Top with remaining cheese.
  8. Bake for 20-25 minutes until peppers are tender and cheese is golden and bubbly.
  9. Let cool for 5 minutes before serving.

Boost Your Protein

  • Add a beaten egg to the filling mixture for an extra 3g protein per serving.
  • Serve with a side of Greek yogurt for an extra 5g protein.
  • Sprinkle hemp seeds on top before baking for an extra 3g protein per serving.

Ingredient Substitutions

  • No quinoa? Use cooked brown rice or couscous as the grain base.
  • No cottage cheese? Use ricotta, it melts similarly into the filling.
  • No bell peppers? Use hollowed zucchini halves or portobello mushroom caps.
  • Swap mozzarella for pepper jack to add a spicy kick.
