I spent a week in Greece a few years ago and ate some version of a grain bowl every single day. Fresh vegetables, salty cheese, hearty grains, a squeeze of lemon. It was simple and perfect. When I got home, I wanted to recreate that feeling but with enough protein to actually fuel my workouts.
The trick was stacking protein sources without it feeling forced. Halloumi is the star because it grills beautifully and doesn't melt into a puddle like most cheeses. Chickpeas add bulk and fiber. Feta crumbled on top gives you that salty punch. And a tahini-yogurt dressing ties it all together while sneaking in even more protein. Each layer does work.
This is my go-to lunch when I want something that feels light but still delivers. I meal prep the components on Sunday and assemble throughout the week. The farro holds up way better than rice when stored, and the halloumi reheats great in a pan. Thirty-four grams of protein from a bowl that tastes like a Mediterranean vacation.
The Protein Upgrade
A standard Mediterranean grain bowl uses minimal cheese and relies mostly on grains for substance, landing around 14-16g protein per serving. We loaded this with 10oz of grilled halloumi, a full can of chickpeas, crumbled feta, and a Greek yogurt-tahini dressing. The protein more than doubled to 34g per serving while keeping the fresh, bright flavors intact.

Instructions
Cook farro according to package directions until tender but still chewy. Drain and set aside to cool slightly.
Preheat oven to 425°F (220°C). Toss zucchini, bell pepper, and red onion with 1 tbsp olive oil, cumin, smoked paprika, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until tender and charred at the edges.
While vegetables roast, toss the chickpeas with remaining olive oil and a pinch of salt. Spread on a second baking sheet and roast for 20 minutes until crispy, shaking the pan halfway through.
Make the dressing: Whisk together Greek yogurt, tahini, lemon juice, minced garlic, and a pinch of salt until smooth. Add water a tablespoon at a time until it reaches a drizzleable consistency.
Heat a non-stick pan or grill pan over medium-high heat. Cook halloumi slices for 2-3 minutes per side until golden brown and crispy. Cut into bite-sized pieces.
Divide the farro among four bowls. Arrange roasted vegetables, crispy chickpeas, grilled halloumi, cherry tomatoes, and olives on top.
Drizzle generously with the yogurt-tahini dressing.
Top with crumbled feta, fresh parsley, and mint. Serve immediately while the halloumi is still warm.
