This is my go-to meal prep lunch, and I've been making it almost every week for the past two years. The beauty of it is that everything cooks in one batch on Sunday afternoon. Roast the sweet potatoes, cook the quinoa, drain the beans, pickle the onions, make the dressing, all of it done in about 45 minutes of mostly passive time. Then I portion it into four containers and I'm set through Thursday.
The quinoa and black bean combo is the foundation, and it's no accident. Together they form a complete protein, quinoa covers the amino acids that beans are missing, and vice versa. It's one of the cleanest ways to stack plant-based protein without relying on processed stuff. The pepitas (pumpkin seeds) are the stealth move here. They add a great crunch and an extra 5g protein per serving that most people wouldn't think to include.
The lime-cilantro dressing ties it all together. It's just lime juice, olive oil, minced garlic, and a bunch of chopped cilantro blended until smooth. Bright, fresh, and cuts through the richness of the avocado and cotija. I drizzle Greek yogurt on top too, partly for the tangy contrast and partly because it adds another protein bump. At 26g per bowl, this is legitimately competitive with any chicken-and-rice meal, and it's way more interesting to eat.
A standard grain bowl relies on grains and vegetables with minimal protein additions, typically hitting 10-14g per serving. We build the base with quinoa (a complete protein), add a full can of black beans, crumble on cotija cheese, include pepitas, and finish with a Greek yogurt drizzle to reach 26g per serving.
