I started making this salad out of necessity during a summer when I refused to turn on the stove for anything beyond cooking the quinoa. Everything else in this salad is raw or frozen, and the whole thing eats best cold straight from the fridge. It became my default side dish for everything from grilled tofu to curries.

Quinoa & Edamame Salad

Instructions
Cook quinoa according to package directions. Spread on a baking sheet or large plate to cool quickly. You want it room temperature or cold for this salad.
If using frozen edamame, thaw by running under warm water for a minute or microwaving for 1-2 minutes. Drain well.
Make the sesame-ginger dressing: Whisk together sesame oil, rice vinegar, soy sauce, grated ginger, honey, and lime juice until well combined.
In a large bowl, combine the cooled quinoa and edamame.
Add diced cucumber, red bell pepper, and sliced scallions. Toss to combine.
Pour the dressing over the salad and toss until everything is evenly coated.
Fold in the chopped cilantro.
Sprinkle toasted sesame seeds on top. Taste and adjust salt as needed.
Serve immediately or refrigerate for up to 5 days. The salad tastes great cold and the flavors develop as it sits.
