This is the snack I make when I have absolutely zero motivation to cook but still need to hit my protein numbers. It takes five minutes, requires no heat, no blender, no real effort at all. Just scoop cottage cheese into a bowl and throw some spices and vegetables on top.

The Indian spice angle is what makes this worth talking about. Plain cottage cheese is one of those foods that most people tolerate but nobody gets excited about. Roasted cumin changes that. You take whole cumin seeds, dry-roast them in a pan for a minute until they start to smell nutty and smoky, then crush them roughly. That smoky cumin mixed into cold, creamy cottage cheese is genuinely good.   • ½ medium cucumber (diced)
  • 1 small tomato (diced)
  • 1 tbsp lemon juice
  • 1 pinch red chili flakes (optional)
  • 1 tbsp fresh cilantro (chopped)

Instructions

  1. Dry-roast the cumin seeds in a small pan over medium heat for about 60 seconds, shaking the pan, until they darken slightly and smell nutty. Crush them roughly with the back of a spoon or a mortar and pestle.
  2. Divide the cottage cheese between two bowls.
  3. Top each bowl with diced cucumber and tomato.
  4. Sprinkle the roasted cumin, chaat masala, black salt, and chili flakes over the top.
  5. Squeeze lemon juice over everything and garnish with fresh cilantro.
  6. Mix it all together and eat immediately, or cover and refrigerate for up to a day.

  • Add a tablespoon of roasted peanuts for an extra 4g protein and crunch.
