  • 1 tsp cumin
  • 3 cloves garlic (minced)
  • 1 medium onion (diced)
  • 1 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup Greek yogurt (for topping) 2g protein
  • ¼ cup fresh cilantro (chopped, for garnish)

Instructions

  1. Preheat oven to 375°F. Line a baking sheet with parchment paper.
  2. Halve the poblano peppers lengthwise and remove the seeds and membranes. Place cut-side up on the baking sheet and drizzle lightly with olive oil.
  3. Heat olive oil in a large skillet over medium heat. Sauté the diced onion until softened, about 4-5 minutes. Add the garlic and cumin, cooking for 1 minute until fragrant.
  4. Add the drained black beans, cooked quinoa, corn kernels, and minced chipotle peppers to the skillet. Stir well and cook for 3-4 minutes until heated through. Season with salt and pepper.
  5. Remove from heat and stir in half of the shredded cheese, letting it melt into the filling.
  6. Spoon the filling generously into each poblano half, mounding it up. Top each pepper with the remaining cheese.
  7. Bake for 25-30 minutes until the peppers are tender and the cheese is bubbly and golden.
  8. Let cool for 5 minutes, then top each pepper with a dollop of Greek yogurt and a sprinkle of fresh cilantro. Serve two halves per person.
