This parfait came from trying to find a no-cook, high-protein breakfast I could assemble half-asleep at 5:30 AM. I wanted something that tasted good enough to actually look forward to, but required zero cooking and zero thought on a Monday morning.

The cardamom is what makes this stand out from every other yogurt parfait out there. It transforms plain Greek yogurt into something that tastes almost like dessert. The almond butter stirred into the yogurt was my other key move. It adds 4g of protein per serving while making the yogurt incredibly thick and rich.

I make four of these in mason jars every Sunday night. They keep perfectly in the fridge for 3-4 days. Grab one on the way out the door. Twenty-one grams of protein before you even think about cooking.

The Protein Upgrade

A typical yogurt parfait with regular yogurt and granola provides about 8-10g of protein. We made four upgrades: thick Greek yogurt as the base (triple the protein of regular yogurt), stirred in almond butter for richness and protein, added hemp seeds (one of the most protein-dense seeds available), and topped with extra nuts. The result is 21g per serving, double a standard parfait, and it tastes like dessert.

Ingredients

  • 3 cups Greek yogurt (plain, full-fat or 2%) 13g protein
  • 3 tbsp almond butter (stirred into yogurt) 3g protein
  • ¼ cup almonds (roughly chopped) 2g protein
  • ¼ cup pistachios (roughly chopped) 2g protein
  • 3 tbsp hemp seeds 3g protein
  • 3 tbsp chia seeds 1g protein
  • 2 tbsp pumpkin seeds 1g protein
  • 2 tbsp honey or maple syrup
  • ½ tsp cardamom powder
  • ¼ tsp cinnamon
  • ½ cup granola (low-sugar preferred) 1g protein
  • ½ cup mixed berries (fresh or frozen)
  • 1 pinch saffron threads (optional, soaked in 1 tbsp warm milk)

Instructions

  1. Mix Greek yogurt with almond butter, cardamom, cinnamon, and saffron milk (if using). Stir vigorously until the almond butter is fully incorporated and the yogurt is thick and creamy.
  2. Prepare 4 mason jars or containers for meal prep.
  3. Layer 1: Add a few tablespoons of granola to the bottom of each jar.
  4. Layer 2: Spoon a generous layer of the almond butter-spiced yogurt.
  5. Layer 3: Add mixed berries.
  6. Layer 4: Sprinkle hemp seeds, chia seeds, pumpkin seeds, chopped almonds, and pistachios.
  7. Layer 5: Add another layer of spiced yogurt.
  8. Top with remaining nuts, a final sprinkle of hemp and chia seeds, and a drizzle of honey.
  9. Cover and refrigerate. Best eaten within 3-4 days.

Boost Your Protein

  • Use skyr instead of Greek yogurt for an extra 3-4g protein per serving.
  • Add 1 scoop unflavored protein powder to the yogurt for an extra 6-8g protein per serving.
  • Double the almond butter for an extra 4g protein per serving.

Ingredient Substitutions

  • No almond butter? Use cashew butter or sunflower seed butter.
  • No hemp seeds? Use flax seeds or additional chia seeds.
  • No saffron threads? Use a drop of vanilla extract plus a pinch of turmeric for color.
  • Swap granola for toasted rolled oats for less added sugar.
