I got tired of buying frozen naan that tasted like cardboard. Making it from scratch sounds intimidating but it's really just mixing dough and cooking it in a hot skillet. The Greek yogurt in the dough is the key. It makes the naan softer and adds protein that regular naan doesn't have.

The garlic butter at the end is essential. I brush it on hot so it melts right into the surface. These come out better than most restaurant naan, and I'm not just saying that. My roommate who grew up eating naan at every meal confirmed it.

The Protein Upgrade

Standard naan uses water or milk in the dough, yielding about 4g protein per piece. Adding Greek yogurt to the dough bumps each naan to 6g protein while making the texture softer.

Ingredients

  • 2 cups all-purpose flour 4g protein
  • ½ cup Greek yogurt 2g protein
  • ¼ cup warm water
  • 1 tsp sugar
  • 1 tsp instant yeast
  • ½ tsp baking powder
  • ¾ tsp salt
  • 1 tbsp oil
  • 3 tbsp butter (melted)
  • 4 cloves garlic (minced)
  • 2 tbsp fresh cilantro (chopped)

Instructions

  1. Dissolve sugar and yeast in the warm water. Let it sit for 5 minutes until foamy.
  2. In a large bowl, mix flour, baking powder, and salt. Add the Greek yogurt, yeast mixture, and oil. Mix until a shaggy dough forms.
  3. Knead on a lightly floured surface for 3-4 minutes until smooth and slightly tacky. Cover and let rest for 30 minutes.
  4. While the dough rests, mix the melted butter with minced garlic. Set aside.
  5. Divide the dough into 6 equal pieces. Roll each piece into an oval about 1/4 inch thick.
  6. Heat a cast iron skillet or heavy pan over high heat. When very hot, place one naan on the dry skillet.
  7. Cook for 1-2 minutes until the bottom has golden brown spots and the top starts to bubble. Flip and cook for another 1 minute.
  8. Remove from the skillet and immediately brush with garlic butter. Sprinkle with cilantro. Repeat with remaining dough.
