The Greek flavor profile here is what keeps me making these instead of plain egg muffins. Ingredients

  • 10 large eggs 15g protein
  • 4 oz feta cheese (crumbled) 6g protein
  • 2 cups fresh spinach (roughly chopped)
  • ¼ cup sun-dried tomatoes (chopped)
  • ¼ cup kalamata olives (chopped)
  • 1 tsp dried oregano
  • ½ tsp black pepper
  • 1 tbsp olive oil (for greasing the muffin tin)

Instructions

  1. Preheat oven to 375°F. Generously grease a 12-cup muffin tin with olive oil, making sure to coat the sides well.
  2. Crack all 10 eggs into a large bowl and whisk until well combined. Season with oregano and black pepper. Don't add extra salt, the feta and olives bring plenty.
  3. Fold in the crumbled feta, chopped spinach, sun-dried tomatoes, and kalamata olives. Stir until everything is evenly distributed.
  4. Pour the egg mixture evenly into the 12 muffin cups, filling each about three-quarters full.
  5. Bake for 18-20 minutes until the muffins are puffed up and set in the center. A toothpick inserted in the middle should come out clean.
  6. Let the muffins cool in the tin for 3-4 minutes before carefully running a butter knife around the edges and removing them.
  7. Serve warm or let cool completely and store in an airtight container in the fridge for up to 5 days. Reheat in the microwave for 30 seconds.
