A protein-loaded twist on classic tabbouleh, swapping in lentils for most of the bulgur and topping with golden grilled halloumi slices.
Traditional tabbouleh is mostly herbs and bulgur, light, fresh, and honestly one of the most refreshing things you can eat on a hot day. But it's not much of a meal on its own. You're looking at maybe 5-6g of protein per serving, which is fine as a side dish but doesn't cut it when you need actual fuel. The fix is simple: swap in cooked lentils for most of the bulgur. Lentils have a similar earthy, nutty vibe that works perfectly with the parsley and lemon, and a cup of cooked lentils brings about 18g of protein to the table. You keep a small amount of bulgur for that traditional texture, but the lentils do the heavy lifting.
Then you add grilled halloumi on top and the whole thing becomes a legitimate 28g-protein lunch. I grill the halloumi in thick slices so you get those char marks and that squeaky, satisfying chew. The key with halloumi is high heat, short time. You want a golden crust before the inside gets too soft. Slice it up and lay it right on top of the tabbouleh so the warm cheese hits the cool, lemony salad. That temperature contrast is everything.
This is one of my go-to meal prep lunches. The lentil tabbouleh base actually tastes better after a day in the fridge because the lentils and bulgur soak up all that lemon dressing and the herbs stay bright. I'll make a big batch on Sunday, portion it into containers, and just sear fresh halloumi each day before I eat. Takes two minutes and you've got a lunch that's fresh, filling, and packed with protein.
