I wanted a lentil soup that felt like actual soup, something I could eat at my desk with a spoon, not a full rice-and-dal situation, but that still delivered serious protein. Most lentil soups at restaurants give you maybe 10-12g per bowl. That's not a meal.

The trick is using a combination of red and yellow lentils. Red lentils break down completely, creating that silky, creamy base, while yellow lentils hold their shape slightly, adding texture. But even with generous lentils, a standard version still falls short on protein.

The cottage cheese is the secret weapon. Blended right into the soup, it vanishes completely while adding substantial protein and making the texture even more luxurious. The paneer croutons on top, small cubes toasted until golden, add crunch and even more protein. At 30g per serving, this is a soup that can anchor a meal. I keep batches of this in the freezer for those weeks when I don't have time to meal prep.

The Protein Upgrade

A standard lentil soup delivers about 10-12g of protein per serving. We made three upgrades: increased the lentil ratio substantially (1 cup each of two types), blended in a full cup of cottage cheese (completely invisible but adds ~7g per serving and incredible creaminess), and top each bowl with toasted paneer croutons (5oz) and a thick swirl of Greek yogurt. From ~11g to 30g, nearly 3x the protein without losing any of that silky, comforting texture.

Ingredients

  • 1 cup red lentils (masoor dal) 6g protein
  • 1 cup yellow lentils (toor dal) 6g protein
  • 5 cups water or vegetable broth
  • 1 cup cottage cheese 4g protein
  • 5 oz paneer (cut into small cubes, for croutons) 9g protein
  • 1 tbsp ghee or oil
  • 1 medium onion (diced)
  • 3 cloves garlic (minced)
  • 1 inch ginger (grated)
  • 1 medium carrot (diced)
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • ½ tsp turmeric
  • ½ tsp garam masala
  • 1 tsp salt
  • ½ cup Greek yogurt (for swirling on top) 2g protein
  • 1 lemon (juiced)
  • 2 tbsp fresh cilantro (for garnish)

Instructions

  1. Wash both lentils thoroughly.
  2. Heat ghee in a large pot over medium heat. Sauté onion until softened, about 5 minutes.
  3. Add garlic, ginger, and carrot. Cook for 2 minutes.
  4. Add cumin, coriander, and turmeric. Stir for 30 seconds.
  5. Add both lentils and water or broth. Bring to a boil.
  6. Reduce heat and simmer for 25-30 minutes until lentils are completely tender.
  7. Add cottage cheese to the pot. Use an immersion blender to blend until smooth and creamy. The cottage cheese will disappear completely.
  8. Stir in garam masala, salt, and lemon juice. Adjust consistency with more water if needed.
  9. Toast the paneer croutons: Fry paneer cubes in a small pan with a little oil until golden on all sides.
  10. Serve in bowls topped with a swirl of Greek yogurt, golden paneer croutons, and fresh cilantro.

Boost Your Protein

  • Add a boiled egg per serving for an extra 6g protein.
  • Increase paneer croutons to 7oz for an extra 3g protein per serving.
  • Stir in 2 tbsp peanut butter while blending for an extra 4g protein per serving.

Ingredient Substitutions

  • No toor dal? Use moong dal or additional red lentils.
  • No paneer? Use crumbled firm tofu.
  • No ghee? Use coconut oil or butter.
  • No cottage cheese? Use ricotta or extra Greek yogurt stirred in at the end.
