I put this bowl together when I wanted something that felt lighter and fresher than a heavy curry but still delivered serious protein. Turns out lentils and feta are a match made in heaven. The earthy warmth of the lentils against the salty tang of the feta just works.

The key is making lentils the star, not just an accent. Most grain bowls treat them as a side thought and end up around 12-14g protein. I made lentils the base, added a full hard-boiled egg per serving, increased the feta to a generous 5oz, and built a tahini-lemon dressing that adds its own protein. The result is 26g per serving, enough to make this a real meal.

This has become my go-to when I want to switch things up from my usual rotation. It takes about 30 minutes, most of which is just the lentils simmering. I prep the toppings while they cook, assemble the bowls, and dinner's done. Great for meal prep too, just keep the dressing and greens separate until you're ready to eat.

Mediterranean Lentil & Feta Bowl

Ingredients

  • 1 ½ cups green or brown lentils (dried) 10g protein
  • 5 oz feta cheese (crumbled) 8g protein
  • 4 large eggs (hard-boiled and halved) 6g protein
  • 1 cup cherry tomatoes (halved)
  • 1 medium cucumber (diced)
  • ¼ cup red onion (thinly sliced)
  • ¼ cup kalamata olives (halved)
  • 2 cups arugula or mixed greens
  • 1 tsp cumin powder
  • 1 bay leaf
  • 2 tbsp tahini 1g protein
  • 2 tbsp olive oil
  • 3 tbsp lemon juice
  • 1 clove garlic (minced, for dressing)
  • 1 tsp dried oregano
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

  1. Rinse lentils. Add to a pot with 5 cups water, bay leaf, and cumin. Bring to a boil, then simmer for 20-25 minutes until tender but not mushy. Drain and discard bay leaf.
  2. While lentils cook, hard-boil the eggs: cover with cold water, bring to a boil, cover and remove from heat for 10 minutes, then ice bath and peel. Halve them.
  3. Make the tahini-lemon dressing: whisk together tahini, olive oil, lemon juice, garlic, oregano, 2 tbsp warm water, salt, and pepper until smooth.
  4. Prepare toppings: halve tomatoes, dice cucumber, slice onion, halve olives.
  5. Assemble bowls: start with a bed of arugula, spoon warm lentils over the greens.
  6. Top with cherry tomatoes, cucumber, red onion, olives, and halved hard-boiled eggs.
  7. Crumble feta generously over each bowl.
  8. Drizzle with tahini-lemon dressing and serve.

Boost Your Protein

  • Add a second egg per serving for an extra 6g protein.
  • Increase feta to 7oz for an extra 3g protein per serving.
  • Add a scoop of hummus for an extra 4g protein.

Ingredient Substitutions

  • No feta? Use goat cheese or halloumi crumbles for a similar salty tang.
  • No tahini? Use almond butter or sunflower seed butter thinned with lemon juice.
