The masala omelette is the unsung hero of Indian breakfasts. Every street-side stall in India makes some version of it. Eggs cracked onto a hot tawa, scattered with onions, green chilies, and a pinch of turmeric, folded over, and served with toast or paratha. It takes five minutes and it's delicious. But a standard two-egg omelette only gives you about 12g of protein. Not enough.

My version uses three eggs per omelette and stuffs each one with spiced paneer crumbles. The paneer gets a quick toss with cumin, chili powder, and a squeeze of lemon so it has actual flavor. When the omelette folds over the warm paneer, it gets slightly melty and adds this incredible richness. It's like having a paneer paratha and an omelette at the same time, in half the effort.

This is my weekday morning go-to. I can make two of these in about ten minutes total. Eat one, pack one for the road. At 32g protein per serving and under 400 calories, it's the best ratio I've found for a quick breakfast. Pair it with toast or eat it solo, either way you're starting the day right.

The Protein Upgrade

A standard Indian masala omelette uses 2 eggs with vegetables, hitting about 12-14g protein. We bumped each omelette to 3 eggs and added 2oz of spiced paneer crumbles per serving. That takes it from 12g to 32g protein, nearly triple, while keeping the cook time under 10 minutes.

Ingredients

  • 6 large eggs (3 per omelette) 18g protein
  • 4 oz paneer (crumbled into small pieces) 14g protein
  • 1 small onion (finely diced)
  • 2 green chilies (finely chopped)
  • 2 tbsp fresh cilantro (chopped)
  • ½ tsp cumin powder
  • ¼ tsp turmeric
  • ½ tsp chili powder
  • ½ tsp salt (divided)
  • ¼ tsp black pepper
  • 1 tbsp butter or oil (for cooking)
  • 1 small tomato (finely diced, optional)
  • 1 squeeze lemon juice

Instructions

  1. Season the crumbled paneer: Toss the paneer crumbles with cumin powder, chili powder, a pinch of salt, and a squeeze of lemon juice. Set aside.
  2. Beat 3 eggs in a bowl with a pinch of salt, pepper, and turmeric. Add half the diced onion, half the green chilies, and half the cilantro to the egg mixture. Whisk well.
  3. Heat half the butter in a non-stick pan over medium heat. Swirl to coat the pan.
  4. Pour the egg mixture into the pan and tilt to spread it evenly into a thin, even layer. Cook for 1-2 minutes until the bottom is set and golden.
  5. Scatter half the spiced paneer crumbles over one half of the omelette. Add diced tomato if using.
  6. Fold the other half of the omelette over the filling. Press gently and cook for another minute until the eggs are fully set and the paneer is warm.
  7. Slide onto a plate. Repeat with the remaining eggs, paneer, and vegetables for the second omelette.
  8. Garnish with remaining cilantro and serve immediately with toast, paratha, or on its own.

Boost Your Protein

  • Add a tablespoon of cottage cheese to the egg mixture before cooking for an extra 2g protein per serving.
  • Use 5oz paneer total instead of 4oz for an extra 2g protein per serving.
  • Serve with a side of Greek yogurt for an extra 5-8g protein.

Ingredient Substitutions

  • No paneer? Use crumbled feta or halloumi for a different but equally delicious filling.
  • No green chilies? Use a pinch of red pepper flakes or diced jalapeño.
  • No fresh cilantro? Use dried parsley or skip it entirely.
  • Swap butter for oil or ghee depending on your preference.
