Ingredients

  • 1 cup red lentils (rinsed, dry measure) 11g protein
  • 8 oz protein pasta (chickpea or lentil pasta) 13g protein
  • 2 oz parmesan cheese (grated, plus more for serving) 5g protein
  • ½ cup cottage cheese (stirred into sauce at the end) 4g protein
  • 1 can (28oz) crushed tomatoes
  • 1 tbsp tomato paste
  • 1 tbsp olive oil
  • 1 medium onion (finely diced)
  • 2 medium carrots (finely diced)
  • 2 stalks celery (finely diced)
  • 4 cloves garlic (minced)
  • 1 cup vegetable broth
  • 2 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp red pepper flakes
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tbsp balsamic vinegar
  • 2 tbsp fresh basil (torn, for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the diced onion, carrots, and celery. Cook for 6-7 minutes until softened and the onion turns translucent.
  2. Add garlic and cook for 1 minute until fragrant.
  3. Add tomato paste, oregano, dried basil, and red pepper flakes. Stir for 30 seconds to toast the spices.
  4. Add the rinsed red lentils, crushed tomatoes, vegetable broth, salt, and pepper. Stir everything together.
  5. Bring to a boil, then reduce heat to low. Simmer uncovered for 25-30 minutes, stirring occasionally, until the lentils have completely broken down into a thick, meaty sauce. Add a splash of water if it gets too thick.
  6. While the sauce simmers, cook the protein pasta according to package directions. Drain, reserving half a cup of pasta water.
  7. Stir the balsamic vinegar into the sauce. Add the cottage cheese and stir vigorously until it melts completely into the sauce, adding creaminess and protein. Taste and adjust salt and pepper.
  8. Add the cooked pasta to the sauce and toss to combine, adding a splash of reserved pasta water if needed to loosen.
  9. Serve in bowls topped with grated parmesan and torn fresh basil.

Boost Your Protein

  • Add a fried egg on top for an extra 6g protein per serving.
  • Increase cottage cheese to a full cup for an extra 3-4g protein per serving.

Ingredient Substitutions
