Dal makhani is one of those slow-cooked dishes that rewards patience. The combination of black lentils and kidney beans simmered low and slow creates this incredibly rich, creamy texture that feels indulgent but is actually packed with protein. It's comfort food that works for you, not against you.

The traditional version finishes with butter and cream, which tastes amazing but doesn't do much for your macros. I swapped in cottage cheese blended right into the dal. It adds creaminess and a ton of protein without changing the flavor, and I finish with Greek yogurt instead of cream. That takes it from about 15g to 28g protein per serving while cutting the empty calories.

The Protein Upgrade

Restaurant dal makhani is famous for its butter and cream, but a typical serving delivers only 14-16g of protein. We made three upgrades: increased the dal and rajma quantities significantly, blended a cup of cottage cheese right into the dal for invisible protein and extra creaminess, and replaced cream with Greek yogurt. The protein went from ~15g to 28g per serving, nearly double, while cutting the empty calories from cream and excess butter.

Ingredients

  • 2 cups whole urad dal (black lentils) (soaked overnight) 12g protein
  • ¾ cup rajma (red kidney beans) (soaked overnight) 5g protein
  • 1 cup cottage cheese 4g protein
  • 2 tbsp butter or ghee
  • 1 large onion (finely diced)
  • 4 cloves garlic (minced)
  • 1 inch ginger (grated)
  • 2 medium tomatoes (pureed)
  • 1 tsp cumin seeds
  • 1 tsp garam masala
  • ½ tsp turmeric
  • 1 tsp chili powder
  • 1 tsp salt
  • ¾ cup Greek yogurt 3g protein
  • 4 cups water
  • 1 tbsp kasuri methi (dried fenugreek leaves)

Instructions

  1. Drain the soaked dal and rajma. Add them to a large pot with 4 cups of water. Bring to a boil, then reduce heat and simmer for 45 minutes (or 15 minutes in a pressure cooker) until completely tender.
  2. While dal cooks, prepare your other ingredients.
  3. In a separate pan, heat butter or ghee over medium heat. Add cumin seeds and let them splutter.
  4. Add the diced onion and cook until golden brown, about 8 minutes.
  5. Add garlic and ginger, sauté for 1 minute.
  6. Add the pureed tomatoes, turmeric, chili powder, and salt. Cook until the oil separates from the masala, about 8-10 minutes.
  7. Pour this masala mixture into the cooked dal and rajma. Add garam masala and stir well.
  8. Simmer on low heat for 15 minutes, stirring occasionally, until thick and creamy. Mash some of the dal against the side of the pot.
  9. Add the cottage cheese and stir vigorously until it melts into the dal. Remove from heat. Stir in Greek yogurt and crushed kasuri methi.
  10. Serve hot, garnished with a drizzle of ghee.

Ingredient Substitutions

  • No whole urad dal? Use brown lentils, cook time will be shorter but the flavor works.
  • No rajma? Use pinto beans or black beans as a substitute.
  • No kasuri methi? Use a pinch of dried oregano or fenugreek powder.
  • Swap butter for oil to make it lighter, or use ghee for a more traditional finish.
