I discovered this combination by accident. I had leftover edamame from making a stir-fry and a bag of roasted peanuts on my desk. I tossed them together, hit them with chaat masala and lime juice because that's what I do with everything, and realized I'd stumbled onto something special. The edamame is tender and slightly sweet, the peanuts are crunchy and salty, and the chaat masala ties them together with that tangy-spicy magic.

What blew my mind was the protein math. Three cups of edamame and peanuts split between two servings gives you 30g per serving. Ingredients

  • 3 cups shelled edamame (frozen) 26g protein
  • 1 ¼ oz roasted peanuts (salted or unsalted) 5g protein
  • 1 ½ tsp chaat masala
  • ½ tsp red chili powder
  • ½ tsp cumin powder
  • 1 tbsp lime juice (about half a lime)
  • ½ tsp salt
  • 2 tbsp fresh cilantro (chopped)
  • 1 green chili (finely chopped, optional)

Instructions

  1. Cook the edamame: Bring a small pot of salted water to a boil, add the frozen shelled edamame, and cook for 3 minutes. Drain well.
  2. Alternatively, microwave the edamame with a splash of water for 2-3 minutes until heated through. Drain.
  3. While the edamame is still warm, transfer to a bowl and add the roasted peanuts.
  4. Sprinkle chaat masala, chili powder, cumin powder, and salt over the edamame and peanuts.
  5. Squeeze lime juice over everything and toss to coat evenly.
  6. Add chopped cilantro and green chili if using. Toss once more.
  7. Serve immediately while warm. The edamame tastes best when it's warm and the spices cling to it.
